At Adobe Oven, each day begins before sunrise with the preparation of naturally leavened doughs and fresh batters. We source flour from regional mills and seasonal fruits from local farms to ensure quality and traceability. Our bakers follow traditional methods for mixing, proofing, and shaping, allowing time and temperature to guide development. The ovens are fired to consistent temperatures that suit each product type, from crusty sourdough loaves to delicate laminated pastries. We produce a rotating menu of breads, filled pastries, cookies, and desserts—always baked that morning. Our approach prioritizes process over haste, with an emphasis on understanding how ingredients and environment interact to create texture and flavor.

About Adobe Oven

Adobe Oven opened its doors in Santa Fe with a commitment to preserving the art of slow baking. We believe that quality begins with transparent sourcing and ends with careful handling. Our bakers train in techniques that emphasize dough hydration, fermentation timing, and oven management. We do not use commercial conditioners or frozen dough—each item is created from scratch in our kitchen. The bakery serves as a meeting place where locals and visitors can observe the work in progress. We focus on explaining our methods rather than promising specific results, recognizing that every batch responds to its own conditions.

Seasonal Offerings & Community

Throughout the year, our menu shifts to reflect what is available from nearby growers and farms. We use these ingredients to create limited-run pastries and bread flavors. Adobe Oven also participates in local markets and collaborates with Santa Fe coffee shops to provide fresh deliveries. Our retail space offers a selection of whole loaves, sliced bread, and assorted pastries for takeaway.
